Mango and Tomato Salad Cups
Serves 2. We saw this
in the August 2015 issue of Cooking Light
(135 calories preserving) and had garden fresh lettuce and tomatoes to use.……
1½ c. cubed peeled ripe mango
½ c. grape
tomatoes, quartered
2 tsp. oil
1 tsp.
fresh lime juice

kosher salt

crushed red pepper

shallot, thinly sliced
